Hearty Vegan Green Curry Recipe

This easy recipe for a tasty homemade vegan green curry is one of our favourites! Full of flavour and a warm comforting meal after a long day, it's a forgiving recipe t00 -because who know you don't have time to perfectly weigh and measure each ingredient!

Shopping list: (Serves 2-3)

  • 1 Onion
  • 4-5 Cloves of Garlic
  • A few slices of Ginger
  • 1 Lemon
  • A Handful Snowpeas
  • 2 Sweet potatoes
  • 1 Zucchini
  • 1 Eggplant
  • A handful Shiitake mushrooms
  • 4-5 Baby potatoes
  • Coconut cream - 1 can
  • Green curry paste - 2 tablespoons
  • Lemongrass - 2 pieces
  • Coriander - 1 bunch
  • 2 Teaspoons of peanut butter
  • 1 Cup of rice

  1. Chop all ingredients to preferred size
  2. Cook the rice in a pot
  3. In a separate, big pot :
  • Saute the onions, garlic then add the curry paste
  • Add some water then add ginger and the slightly spanked lemongrass
  • Add the sweet potatoes, zucchini, baby potatoes and cook till half done
  • Then add mushrooms, eggplant and cook till almost done
  • Lastly add the snow peas, peanut butter, coconut cream

4. Serve with rice and lemon zest and coriander on the top
