Quick Summer Panzanella Salad Recipe

A delicious twist on a classic garden salad, this perfectly simple, fresh panzanella recipe is quick to whip up, without any fancy ingredients. The freshness of the tomato and cucumber combined with the salty, crunchy texture of the bread and the tangy dressing ensures this salad

Shopping list:

3-4 slices of white bread, sliced into small cubes

85 ml extra virgin olive oil

3 tbsp red wine vinegar

1 tsp honey

2 cups cherry tomatoes

3/4 English cucumber

1 red onion

1 Clove garlic (minced)

1 tsp salt

1 tsp black ground pepper

Basil for garnish


  • 1. Toast olive-oil coated bread cubes in a large skillet until crisp
  • 2 Drain pan and set aside to cool
  • 3 Make a dressing of the remaining 65ml olive oil mixed with 3 tbsp red wine vinegar & 1 tsp honey.
  • 4 Chop cherry tomatoes, cucumber, red onion & a clove of garlic
  • 5 Toss these fresh ingredients together in a large bowl with the crispy bread
  • 6 Top the salad with the oil dressing, and season with plenty salt & black pepper
  • 6 Garnish with basil and serve
