
This tasty ginger potato dish is flavorful and easy to make. You can cook the potato in advance and use the leftover to prepare it faster.
Ingredients
4 potatoes ( 1-1/2 pounds), peeled and cut into 1-inch pieces
2 tablespoons canola oil
1 onion, chopped
1 jalapeño pepper, finely chopped
1 tablespoon fresh ginger root, minced
1/2 teaspoon ground turmeric
1/4 cup water
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
2 tablespoons chopped fresh coriander
Method
Place potatoes in a large stewpot. Add water to cover and leave it to boil. Reduce heat. cook without covering the pot, 8-12 minutes or until tender. Drain.
In a large skillet, heat oil over medium high heat. Add onion, ginger and jalapeno. Cook 3-4 minutes or until onion is slightly browned. Add turmeric and cook 1 minute longer.
Reduce heat to low. Add potatoes, water, garlic powder, salt and cayenne pepper. Cook, 4-6 minutes (covered), stirring occasionally. Garnish with cilantro and serve.
