Eggs Baked in Avocado - Keto Breakfast Recipe

Delicious, healthy and super easy, we love this simple breakfast recipe of eggs baked in avos. It's great for a low-carb start to the day and will fill you up with protein, and healthy fats, along with a wide variety of nutrients, including 20 different vitamins and minerals from the avocados alone.

Ingredients: (makes 4 servings)

2 x hass avocados

4 x eggs

Chives to garnish

Salt & ground black pepper


  1. Heat the oven to 220 C
  2. Slice avos in half, lengthwise and twist to separate.
  3. Remove the pit and a spoon of avo from the middle to create a larger cavity.
  4. Place the avo halves on a tray and crack one egg into each half.
  5. Sprinkle with salt and pepper
  6. Bake for 15-20 minutes.
  7. Garnish with chives
