Butternut Squash Noodles

Another fantastic pasta substitute is butternut squash. Winter squash roasts fast and may be used in any recipe that calls for zucchini noodles. We like it simply tossed with olive oil and Parmesan or Burrata, but marinara is another favorite! For a quick and tasty lunch, pair them with Garlic Butter Meatballs. The easiest way to move from summer zucchini to October is with these noodles.

INGREDIENTS

16 oz. butternut squash noodles

2 tbsp. extra-virgin olive oil

Salt

Freshly ground black pepper

Pinch crushed red pepper flakes

Freshly grated Parmesan, for serving

DIRECTIONS

  1. Preheat oven to 425°. Place noodles on a large baking sheet and toss with oil, salt, pepper, and pinch of red pepper flakes. Roast until tender and golden in spots, 10 minutes.
  2. Serve noodles warm with Parmesan or Burrata.
